German Potato Soup with Smoked Sausages
Ingredients
- 2-3 tbsp Shetland Farm Dairies butter
- 1 small yellow onion, finely diced
- 1 kg Shetland potatoes, peeled and diced
- 2 carrots, peeled and diced
- 2 litres good quality chicken stock
- 1 pack Herta smoked sausages
- parsley, for garnish
Method
- In a soup pot, saute the onion in the butter until it turns translucent.
- Add the potatoes and carrots and cook until they get some colour.
- Add the chicken stock, bring to the boil, cover and let the soup simmer for 25 minutes.
- When the potatoes are tender, partially blend the soup with an imersion blender until the broth has thickened a little.
- Cut the sausages into slices and add them to the soup.
- Garnish with chopped parsley and enjoy!
