Ingredients
- Rice shaped legumes-available from scoop
- 1carrot
- 1courgette
- 100 grms cauliflower
- 1red pepper
- 1leek
- 1lemon
- 3-4 tbls olive oil
- 3tbls chopped parsley
- Salt and pepper
Method
- Cut up vegetables and lightly steam for two/three minutes.
- Bring to the boil a large pan of boiling water, lightly salted.
- Pour in the rice legume, give it a stir and cook for 3-4 minutes, drain and run under cold water.
- In a sauté pan put a little olive oil and sauté the steamed vegetables for two minutes.
- Add this to the rice legume, add chopped parsley, lemon juice and chopped parsley. Season well and serve.
