Cooking Demonstrations

Here are the details of all the cooking demonstrations you can look forward to - and don't forget, there will be free tasters at every session!

Marian Armitage – Salmon Dishes Sponsored by Cooke Scotland & Scottish Sea Farms

Taste of Shetland Chair and award winning cookbook author, Marian Armitage demonstrates the versatility of Shetland salmon with 2 recipes:

Oven baked Salmon and Seasonal Vegetables; a simple and delicious family style meal which pairs succulent salmon portions with fresh spinach, courgettes and other fresh flavours. A healthy and wholesome one tray recipe that you will soon be adding to your meal plan!

Flaky Salmon En Croute; pairing fresh and tender salmon with flaky rich pastry to create a dish that is simple enough for a weeknight dinner – but looks good enough to impress at a dinner party.

CJ Jackson – White Fish Showcase Sponsored by Shetland Seafood Auctions

CJ Jackson, author of The Great British Seafood Revival and Master Fishmonger will demonstrate skinning, filleting and cooking of whitefish that she will select during a visit to Shetland Seafood Auctions on Friday morning. She will aim to include ling, hake, coley, tusk, catfish, megrim, plaice and witch. CJ will be showcasing whitefish through her two demonstration sessions; so make sure you come along to both!

CJ’s showcase will include pan-fried White Fish with Chilli, Coriander and Tomato Kachumber, Corbiere of Megrim, Witch and Plaice, Fish of the Day in a Coconut and Tamarind Curry, Pepper-coated and Panko Crumbed Fish with Asian Dressing and “Everything” Fish Soup.

CJ’s skills and enthusiasm will make these demonstrations an unmissable showcase of Shetland’s white fish.

Mel Todd – Seafood Paella Sponsored by QA Fish

Mel Todd’s culinary passion and wealth of experience makes her demonstrations an absolute joy to watch. Learning her craft in her native Philippines; she has cooked for Saudi princesses and worked as a private chef in Hong Kong. These days she uses her talent to bring together local ingredients and international flavours to impress her husband and friends.

Mel will be delivering an engaging Seafood Paella demonstration, including how to break down and dress a whole crab. This dish is an exquisite and eye-catching celebration of local seafood – don’t miss out on the tasters!

2.15pm

Sam Laurenson – Mussels Preparation and Recipes Sponsored by SSMG

Tim Regan – Roslin Institute

Taste of Shetland Director, workboat skipper and experienced mussel farmer, Sam Laurenson has extensive knowledge of both the industry and the product.

His demonstration will include preparing and cooking mussels, using some of his favourite ingredients – so make sure you are there to get a taster!

And as if that wasn’t a good enough reason to join us, Tim Regan from the Roslin Institute will join Sam to discuss highlight how Shetland producers are working with cutting edge research to improve the health of Shetland mussels.

CJ Jackson – White Fish Showcase Sponsored by Shetland Seafood Auctions

A continuation of her earlier session – CJ will demonstrate the rest of her recipes and you will be treated to even more delicious tasters! We will also have an oyster showcase with CJ joined by Tom Radford, with thanks to Winston Brown at Shetland Oysters.

4.15pm

Charlie Simpson & Alex Dodge – East o’ Mousa Soup

Local seafood aficionado and author of “In Da Galley”, Charlie Simpson takes to the stage with friend and neighbour, Alex Dodge (president of the Cunningsburgh Show) to prepare Alex’s incredible recipe.

Made using fresh local fish and a blend of Asian flavours; this fishy fusion feast has impressed family, friends and hungry crowds at local events.
