Beernana Bread
Ingredients
- 3 cups self-rising flour
- 3 quarter cup oats (plus some to decorate)
- Half cup light brown sugar
- 3 mashed (over!) ripe bananas
- 1 bottle Lerwick Brewery Tushkar
- Quarter cup maple syrup
- 1 tablespoon olive oil (optional)
Method
- Preheat oven to 190°C and prepare a loaf tin by either greasing or lining (lining is going to be easier!)
- Mix oats, flour and sugar ingredients in a bowl
- Combine banana, beer and maple syrup in a jug/bowl
- Add wet mixture to dry mixture and stir well
- Pour contents into preapred loaf tin
- Sprinkle oats over the top, then drizzle with the oil if using
- Bake in oven for 55 minutes, or until risen and golden brown - check it's cooked thorugh using a skewer (or maakin wire!)
NOTE: This will rise way more than a standard banana loaf! Make sure you leave room above it in the oven!
