Beernana Bread

This recipe just happens to be both dairy and egg free! And has very little fat - just 1 tablespoon of oil - which is optional. Why not give it a try?

Beernana Bread

Ingredients

  • 3 cups self-rising flour
  • 3 quarter cup oats (plus some to decorate)
  • Half cup light brown sugar
  • 3 mashed (over!) ripe bananas
  • 1 bottle Lerwick Brewery Tushkar
  • Quarter cup maple syrup
  • 1 tablespoon olive oil (optional)

Method

  1. Preheat oven to 190°C and prepare a loaf tin by either greasing or lining (lining is going to be easier!)
  2. Mix oats, flour and sugar ingredients in a bowl
  3. Combine banana, beer and maple syrup in a jug/bowl
  4. Add wet mixture to dry mixture and stir well
  5. Pour contents into preapred loaf tin
  6. Sprinkle oats over the top, then drizzle with the oil if using
  7. Bake in oven for 55 minutes, or until risen and golden brown - check it's cooked thorugh using a skewer (or maakin wire!)

NOTE: This will rise way more than a standard banana loaf! Make sure you leave room above it in the oven!
