Cheese, Oat & Spring Onion Soda Bread
Ingredients
- 120g Rolled Oats (Plus a peerie handful for topping)
- 250g Plain Flour
- 1 tsp Bicarbonate of Soda
- 150g Mature Cheddar (grated)
- 4 Spring Onions (chopped)
- 350ml Buttermilk
- Half tsp Dijon Mustard
Method
- Preheat oven to 200°C (180°C Fan) and line a baking sheet with greaseproof paper.
- Blitz oats in food processor until fine, mix with flour, bicarb and season with salt and pepper in a large bowl.
- Add most of cheese, holidng around 20g back for topping. Add all of spring onions.
- Mix well.
- Whisk mustard into buttermilk then gradually add to dry ingredients - a butterknife works well for this.
- Once a shaggy dough consistency is achieved, tip out onto a floured surface and knead until a ball can be formed.
- place on prepared tray, flatten slightly and score top with a deep cross.
- Scatter with oats and remaining cheese.
- Bake for 35 to 40 mins until risen and deep golden brown.
