Cheese, Oat & Spring Onion Soda Bread

Ingredients

  • 120g Rolled Oats (Plus a peerie handful for topping)
  • 250g Plain Flour
  • 1 tsp Bicarbonate of Soda
  • 150g Mature Cheddar (grated)
  • 4 Spring Onions (chopped)
  • 350ml Buttermilk
  • Half tsp Dijon Mustard

Method

  1. Preheat oven to 200°C (180°C Fan) and line a baking sheet with greaseproof paper.
  2. Blitz oats in food processor until fine, mix with flour, bicarb and season with salt and pepper in a large bowl.
  3. Add most of cheese, holidng around 20g back for topping. Add all of spring onions.
  4. Mix well.
  5. Whisk mustard into buttermilk then gradually add to dry ingredients - a butterknife works well for this.
  6. Once a shaggy dough consistency is achieved, tip out onto a floured surface and knead until a ball can be formed.
  7. place on prepared tray, flatten slightly and score top with a deep cross.
  8. Scatter with oats and remaining cheese.
  9. Bake for 35 to 40 mins until risen and deep golden brown.
