Duffins
Ingredients
- 125g Shetland Butter (Melted)
- 200g Caster Sugar
- 3 Hensington Palace Eggs
- 130ml Shetland Buttermilk
- 400g Plain Flour
- 1 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
- Jam, Biscoff or Chocolate Spread to fill
Method
- Preheat oven to 180°C (160°C for fan) and line a muffin tin with cases.
- Mix all dry ingredients in a bowl, add melted butter, buttermilk and eggs and beat until smooth.
- Half fill cases with batter. Then add one teaspoon of filling to each muffin case. Cover with remaining batter.
- Bake for 20 to 25 minutes, until golden and firm to touch.
- Optional: Sprinkle with caster sugar and cinnamon.
- Leave to cool before eating to avoid filling burning your mouth!
