Ingredients

  • 125g Shetland Butter (Melted)
  • 200g Caster Sugar
  • 3 Hensington Palace Eggs
  • 130ml Shetland Buttermilk
  • 400g Plain Flour
  • 1 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda
  • Jam, Biscoff or Chocolate Spread to fill

Method

  1. Preheat oven to 180°C (160°C for fan) and line a muffin tin with cases.
  2. Mix all dry ingredients in a bowl, add melted butter, buttermilk and eggs and beat until smooth.
  3. Half fill cases with batter. Then add one teaspoon of filling to each muffin case. Cover with remaining batter.
  4. Bake for 20 to 25 minutes, until golden and firm to touch.
  5. Optional: Sprinkle with caster sugar and cinnamon.
  6. Leave to cool before eating to avoid filling burning your mouth!
