German Potato Soup with Smoked Sausages

A traditional German potato soup with smoked sausages recipe, as served by Christiane Klang at the 2022 Shetland Food and Drink Festival.

German Potato Soup with Smoked Sausages

Ingredients

  • 2-3 tbsp Shetland Farm Dairies butter
  • 1 small yellow onion, finely diced
  • 1 kg Shetland potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 2 litres good quality chicken stock
  • 1 pack Herta smoked sausages
  • parsley, for garnish

Method

  1. In a soup pot, saute the onion in the butter until it turns translucent.
  2. Add the potatoes and carrots and cook until they get some colour.
  3. Add the chicken stock, bring to the boil, cover and let the soup simmer for 25 minutes.
  4. When the potatoes are tender, partially blend the soup with an imersion blender until the broth has thickened a little.
  5. Cut the sausages into slices and add them to the soup.
  6. Garnish with chopped parsley and enjoy!
