International Kitchen 2023 - Mel's Chicken Adoba

Ingredients

  • 750g chicken thigh fillets boneless skinless
  • 3 garlic cloves finely chopped
  • 1/3 cup soy sauce
  • Thumb size ginger finely chopped
  • 1/3 cup wine vinegar
  • 4 bay leaves
  • 1 teaspoon black pepper
  • 2 tablespoon vegetable oil
  • 3 garlic cloves chopped
  • 3 shallots finely chopped
  • 1 ½ cups water
  • 2 tablespoon brown sugar
  • 2 teaspoon black pepper

Method

  1. Combine chicken and marinade ingredients in a big bowl. Marinate at least 20 minutes or up to overnight.
  2. Separate chicken from marinade (keep marinade). Heat 1 tablespoon of oil in a skillet over high heat. Sear both side of the chicken until browned, about minute each side. Do not cook chicken all the way through. Set aside.
  3. Heat the remaining oil in skillet. Add garlic, shallots. Cook for 2 minutes.
  4. Add the reserved marinade, sugar and black pepper. Bring it to simmer then turn heat down to medium high. Simmer 5 minutes.
  5. Add chicken. Simmer uncovered for 20-25 minutes or until the sauce reduces to thick jam like syrup.
  6. Serve with steamed rice and garnish with chopped spring onion.
