Key Lime Pie
Ingredients
- 300g Oat Biscuits
- 110g Melted Shetland Butter
- Can of Condensed Milk
- 3 Shetland Egg Yolks
- 4 Limes - Zest & Juice
Topping
- 250ml Double Cream
- 2 tsp icing sugar
- Lime Zest
Method
- Blitz biscuits into crumbs, mix with melted butter
- Pack down into small ramekins so it covers the base and sides
- Bake in oven at 160°C for 10 mins, then cool
- Add egg yolks to a bowl, whisk with electric beaters for 1 min
- Add condensed milk and whisk for 3 mins
- Add lime juice and zest, whisk for 3 mins
- Divide mixture between biscuit lined ramekins
- Bake in oven at 160°C for 15 mins, then cool in oven for 6 hours
- Whisk double cream and icing sugar until thick
- Top Key lime pies with whipped cream and add more lime zest to finish.
