Key Lime Pie

Ingredients

  • 300g Oat Biscuits
  • 110g Melted Shetland Butter
  • Can of Condensed Milk
  • 3 Shetland Egg Yolks
  • 4 Limes - Zest & Juice

Topping

  • 250ml Double Cream
  • 2 tsp icing sugar
  • Lime Zest

Method

  1. Blitz biscuits into crumbs, mix with melted butter
  2. Pack down into small ramekins so it covers the base and sides
  3. Bake in oven at 160°C for 10 mins, then cool
  4. Add egg yolks to a bowl, whisk with electric beaters for 1 min
  5. Add condensed milk and whisk for 3 mins
  6. Add lime juice and zest, whisk for 3 mins
  7. Divide mixture between biscuit lined ramekins
  8. Bake in oven at 160°C for 15 mins, then cool in oven for 6 hours
  9. Whisk double cream and icing sugar until thick
  10. Top Key lime pies with whipped cream and add more lime zest to finish.
