The Great Shetland Bake Off - Week 3 - Marian's Cinnamon Rolls

Marian's Cinnamon Rolls

Ingredients

For the dough:

  • 500g strong white flour
  • Level teaspoon cinnamon
  • Level teaspoon saat
  • 7g instant yeast
  • 350ml Shetland Farm Dairies Whole Milk
  • 50g Shetland Farm Dairies Butter
  • 50g Caster sugar

For the filling:

  • 75g Soft brown sugar
  • 75g Shetland Farm Dairies Butter
  • 100g Sultanas
  • Level teaspoon mixed spice
  • Level teaspoon cinnamon

For the Bunwash:

  • 3 tablespoons water
  • 3 tablespoons granulated sugar

Method

  1. Add all dry dough ingredients to a muckle bowl.
  2. Put all wet dough ingredients in a medium pan, warm gently till butter melts.
  3. Add to flour and mix thoroughly: knead by hand or machine for a good 5 minutes.
  4. Re-use the same pan (to save dee washing up!) put all the filling ingredients in, warm slowly till everything is well mixed and set aside. (The sultanas will become plump and cinnamoney and delicious!)
  5. After about an hour the dough will have doubled in size. Tip it out onto a lightly floured worktop and knead into a smooth ball then roll out till it is roughly 35cm square. It will keep springing back but persevere and keep going.
  6. Add the sultana mixture and spread right to the edges. Roll into a muckle sausage shape and cut into 8 even pieces.
  7. Place on to a piece of baking paper in a roasting tin or baking tray.
  8. Leave to prove (rise) for approximately 45 minutes (maybe a peerie bit longer). They should be well risen.
  9. Light the oven to 200 degrees C.
  10. Brush a grain o’ milk over the top and place near the top of the oven.
  11. Bake for 15minutes then have a peep.
  12. Reduce heat to 170 for another 5 minutes and cover with a sheet of baking paper if they are going a bit brown.
  13. Now the BUNWASH! Put one tablespoon of granulated sugar and 3 tablespoons water into a peerie pan and dissolve then bring to the boil for 2 minutes.
  14. When the buns are ready put them on to a cooling rack : the whole kitchen will smell fantastic! (keep the paper on for now. )
  15. Brush the bunwash all over the buns. That’s it! Easy!
