The Great Shetland Bake Off - Week 2 - Mary's Florentines

Week 2 of the Great Shetland Bake Off and Mary is taking care of biscuit week with these delicious florentines.

Mary's Florentines

Ingredients

  • 90g Flaked Almonds
  • 30g Cornflakes
  • 60g Raisins
  • 60g Chopped Glace Cherries
  • 30g Chopped Pistachios
  • 45g Shetland Farm Dairies Butter
  • 1 tablespoon Pure Shetland Honey
  • 1 tablespoon Plain Flour
  • A Pinch of Shetland Salt
  • 40g Caster Sugar

For topping/coating biscuits

  • 75g The Chocolate Box White Caramelised White Chocolate with Sea Salt (melted)

Or

  • 75g Island Larder Dark Belgian Chocolate (melted)

Method

  1. Mix togeher almonds, cornflakes, raisins, cherries and pistachios ans set aside.
  2. Mix butter, sugar, honey and flour in a saucepan over a low heat until sugar dissolves.
  3. Mix with dry ingredients.
  4. Divide into lined muffin tins, but don't press too hard!
  5. Bake in oven until golden - 160 C for 16 mins.
  6. Allow to cool in tin.
  7. Melt chocolate and dip bases of cookies in, then sit them upside down on a tray in the fridge to set.
