Masala Puri

Suchita showed us how to make masala puri, in addition to a number of other delicious Indian dishes, in the International Kitchen at the 2022 Shetland Food and Drink Festival.

Masala Puri

Ingredients

  • 3 tbsp oil
  • 1/2 tsp jeera
  • 1 finely chopped onion
  • 2 pinches turmeric powder
  • 2 tsp ginger garlic paste
  • 1 can tomato puree
  • 1/2 tsp chilli powder
  • 1/2 tsp dhania powder
  • 1/2 tsp jeera powder
  • 2 cans mushy peas
  • Shetland sea salt
  • Garam masala
  • Tomato
  • Cucumber
  • Roasted peanuts
  • Fresh coriander
  • Sev
  • Grated carrots
  • Rice crackers or crisps

Method

  1. Heat oil in a pan and add the jeera and onion and saute for 5 minutes.
  2. Add the turmeric for fresh colour and the ginger garlic paste. Saute for 5 minutes until they are cooked with a good flavour.
  3. Add the tomato paste, chilli powder, dhania powder and remaining jeera powder and cook for 7-10 minutes.
  4. Once it's cooked with a good aroma, add garam masala and cook for two more minutes. Cover.
  5. To serve, garnish with more finely chopped onion, tomato, cucumber, peanuts, coriander, sev and grated carrot.
  6. For better taste, add rice crackers or crisps.
