Mel's Crab and Mango Salad
Ingredients (Serves 4)
- 200 g crab meat
- Grated zest 1 lime,juice reserve for dressing
- 3 tbsp chopped coriander
- 3 tbsp chopped mint
For Salad
- 1 large mango
- 1 level tsp roasted sesame seeds
- 100 gram green salad leaves
- 3 tender steam of lemon grass sliced thinly
- 6 Kifer lime leaves finely sliced
- 1 tsp fresh chopped chives
Dressing
- 2 medium red chillies deseeded slice thinly
- 1 inch piece of ginger root
- Few sprigs of coriander and mint
- Half tbsp fish sauce or light soy sauce
- Juice of 2 limes
- 1 tsp soft brown sugar
Method
Blend chillies,garlic,ginger,sprigs of coriander and mint in food processor or until finely chopped, then add the fish sauce, lime juice and sugar and whiz again.
Next, put crab meat into a bowl and pour over half of the dressing, then add lime zest most of the chopped coriander and mint saving some to sprinkle over later.
Now put the green salad leaves a large bowl, toss them in the remaining dressing and pile the crab meat on top along with slices of mango, then sprinkle over the lemon grass, lime leaves, coriander and mint chives and sesame seeds.
