Pizza Muffins
Ingredients
(Makes 12 muffins)
- 250g Plain Flour
- 2 Local Eggs
- 150ml Shetland Milk
- 75g Shetland Butter
- 2 tbsp Tomato Puree
- 1 tsp White Sugar
- 1 tsp Oregano
- 150g Grated Cheese
- 75g Pepperoni (finely chopped and coated in a little flour to help keep it from sticking together)
Method
- Preheat oven to 180°C and line a muffin tray with 12 paper cases.
- Add eggs to flour and whisk together - add milk slowly and whisk in.
- Add melted butter and whisk until well combined.
- Add tomato puree, sugar, oregano, cheese and pepperoni (or the combination you've chosen to use).
- Combine well and share between paper cases.
- Bake in oven at 180°C for 20-25 minutes.
