Pizza Muffins

This recipe can be altered to suit your (or your child's) preferences. Pepperoni could be swapped to ham or cooked bacon. You can add pineapple or cherry tomatoes to add one of their 5 a day. The recipe is very forgiving - so get creative!

Pizza Muffins

Ingredients

(Makes 12 muffins)

  • 250g Plain Flour
  • 2 Local Eggs
  • 150ml Shetland Milk
  • 75g Shetland Butter
  • 2 tbsp Tomato Puree
  • 1 tsp White Sugar
  • 1 tsp Oregano
  • 150g Grated Cheese
  • 75g Pepperoni (finely chopped and coated in a little flour to help keep it from sticking together)

Method

  1. Preheat oven to 180°C and line a muffin tray with 12 paper cases.
  2. Add eggs to flour and whisk together - add milk slowly and whisk in.
  3. Add melted butter and whisk until well combined.
  4. Add tomato puree, sugar, oregano, cheese and pepperoni (or the combination you've chosen to use).
  5. Combine well and share between paper cases.
  6. Bake in oven at 180°C for 20-25 minutes.
