Rhubarb Reel Gin

Ingredients

• 1 Bottle Shetland Reel Gin
• 500g Rhubarb
• 250g Caster Sugar
• Teaspoon Vanilla Paste
• Fresh Root Ginger to taste

Method

1. Chop Rhubarb and place in jar large enough to hold all ingredients.
2. Add sugar, vanilla and ginger.
3. Shake up and leave overnight.
4. Add gin.
5. Seal and shake daily for a couple of weeks.
6. Strain and serve with ice!
