Richard Briggs rears native Shetland lamb for both meat and wool. The Shetland sheep is half the size of many of the UK’s other breeds and is well known for both its fine warm fleece and exceptional meat. The meat from this breed is registered with the Slow Food Movement’s Ark of Taste project, and is slowly beginning to gather the recognition it deserves nationally and internationally.
You can buy whole animals direct from Richard, a real farm to fork product. The meat is available freshly butchered, chilled and packed, suitable for restaurants or home freezing. 18-month old hogget is also available in the same format. Your meat will be delivered direct to your door, locally by Richard himself, throughout Britain via the Royal Mail’s next day special delivery service.
All Briggs’ lamb is 100% purebred native Shetland lamb reared in the isles, processed and packed by the Shetland Livestock Marketing Group. His hill lamb grazes on the open hill at East Kame. In autumn he also sources seaweed fed lamb, from a friend’s flocks that normally have access to the sea shore and are hefted to graze seaweed along the ebb.
The flavour of Shetland lamb at its best comes from animals that graze Shetland plants and grasses, making it a seasonal product, usually available to order between September and December. 18-month old hogget available July-September.
