Donna began her cottage industry almost by mistake. She’d had a bumper crop of chillis in her greenhouse and needed a recipe to use them all up. The first bottles of Whalsay Made Chilli Sauce were produced in her kitchen as a way to do this. The finished sauce proved so popular with friends and family that she began making it to sell.
Her company has blossomed and she now produces a range which includes the ever popular
Whalsay Sweet Chilli Sauce, Gin and Lime Marmalade, made with Shetland Reel gin and Carrot Marmalade, with its distinctive colour and mild marmalady flavour. She also makes pickles, chutneys and traditional Whalsay Fudge.
Donna, who is passionate about food and cooking, uses fresh seasonal produce, sourced as locally as possible. The rhubarb she uses in her Rhubarb preserve and chutney, is grown on the island of Whalsay. She believes that growing up and living on an island gives you an appreciation of the local produce available. Like all good Whalsay bairns, home baking and preserving was an integral part of her home life and played a large part in developing the passion she has for all things foodie.
Whalsay Sweet Chilli sauce is great as a dip, or it can used to coat chicken before oven baking, or you can use it as a sauce in stir fries. Her marmalades and preserves all boast fresh, delicately balanced flavours. A testament to her consummate skill as a chef and her insistence on the best raw ingredients. Availability of all her products is dependent on the seasonal availability of ingredients.
