A Visit to Restaurant Martin Wishart in Edinburgh

Kevin Smith was the 2019 winner of the Muckle Bites cookery competition in the Shetland Food and Drink Festival. His prize was a six-course tasting menu with sommelier wine pairing at Restaurant Martin Wishart in Edinburgh. Due to the subsequent pandemic, he was only able to redeem his prize towards the end of 2022, and this is what he had to say about it...

Hello Taste of Shetland team!

That's us back home in windswept Shetland after a terrific weekend in Edinburgh. We had a brilliant experience. Both Brenda and I thought it felt even more special given we have waited so long to finally enjoy the prize.

We spent the whole week worrying about the weather and if it would affect our flights, but it didn't - Loganair got us down and back without any problems. Hotel Indigo was lovely, with very welcoming staff and a very nice room too, in an excellent location.

Restaurant Martin Wishart was an amazing experience to say the very least! We were very well looked after by all the staff but in particular Callum and Eva who told us all about the food and wine we were enjoying so much.

The food was delicious, perfectly matched with the wine, with every course offering something different to experience.

We tried to count up all the different ingredients we had and we lost count!

We started off with four very different bites - Beetroot & Crowdie, Crab & Langoustine Arancini, Sweetcorn Velouté & Bacon, Beef tartare & Kaviar.

Next up was ceviche of gigha halibut with mango and passion fruit, matched with a lovely white wine from Austria.

This was then followed by Orkney scallop with Jerusalem artichoke, butternut squash and hazelnut pesto and a very flavoursome white wine from South Africa.

Next was our first experience of partridge in ravioli, with buttered cabbage, trompette mushroom and truffle cream, and a nice Spanish red wine.

Now we were heading to the main course of roast loin and pastilla of hare, which was also a first experience for both of us and we were certainly presented with a beautiful dish and a very deep red wine from Sicily, the hare was beautiful.

We opted for the additional extra cheese board and a port which was excellent, followed by the final dish – crème fraiche mousse and a sweet wine from Italy – simply delicious! It would be difficult to single out one dish as they were all so good. The whole experience was pretty special and certainly something we would both like to do again in the future.
