Rice shaped legumes-available from scoop
100 grms cauliflower
3-4 tbls olive oil
3tbls chopped parsley
Salt and pepper
Cut up vegetables and lightly steam for two/three minutes.
Bring to the boil a large pan of boiling water, lightly salted.
Pour in the rice legume, give it a stir and cook for 3-4 minutes, drain and run under cold water.
In a sauté pan put a little olive oil and sauté the steamed vegetables for two minutes.
Add this to the rice legume, add chopped parsley, lemon juice and chopped parsley. Season well and serve.
