The String was established and opened its doors in August 2018. It is a modern restaurant, bar and venue that places strong emphasis on locally sourced ingredients and produce, relying heavily on the bountiful seafood, meat and vegetables supplied by isles producers for fresh seasonal food menus. As many elements of our dishes as possible are created in-house by our talented kitchen team, which is headed by talented head chef and company co-director Akshay Borges.
We also work with a host of craft producers to stock our bar including Glasgow-based WEST Brewery and Ovenbird Coffee Roasters, alongside indigenous drinks companies including Shetland Reel Gin and Lerwick Brewery, and crafts drinks producers from throughout Scotland and beyond.
We programme a wide range of music and other cultural events in our intimate upstairs venue, which has already played host to American singer Kim Richey, Laura Cortese & the Dance Cards, Adam Holmes & the Embers and many of Shetland's rich collection of traditional music exponents. We host regular singer-songwriter and DJ nights, while the venue is also available for private hire.
Head chef and co-director Akshay Borges: Having moved to Scotland from his native Goa in southern India, Akshay spent many years learning about how to cook with Shetland produce at the award-winning Scalloway Hotel restaurant. Chief among his many culinary influences are the Indian street food culture he grew up with and a passion for local seafood. His partner Charlene Storey is also a director and, when she's not busy teaching English, works closely with our bright and enthusiastic front of house team.
Managing partners Neil and Kelly Riddell previously worked as a journalist and an accountant respectively before, inspired by Akshay's cooking talents, deciding on a change in career. They have also promoted local music and other arts events since 2012, while Kelly can bake a mean Swedish pastry.
