Easy Christmas Pudding
Ingredients
- 1 Cup Raisins
- 1 Cup Sultanas
- 1 Cup Self Raising Flour
- 1 Cup Grated Shetland Butter
- 1 Cup Brown Bread Crumbs
- 1 Cup Dark Muscovado Sugar
- 1 Cup Mixed Nuts
- 1 tsp Mixed Spice
- 1 tsp Cinnamon
- 1 Cup Shetland Milk
- 1 Shetland Egg (beaten)
Method
- Mix all dry ingredients in a large bowl.
- Add milk and beated egg.
- Steer it up!
- Pour into pudding bowl and cover with greased tin foil or greased proof paper with a fold in to allow space to rise if needed. Tie with string.
- Bring a large pan of water to the boil and reduce to simmer.
- Add pudding to pan, making sure water is halfway up the side.
- Simmer with a lid for 2 and a half hours.
- Cool and store in an airtight container until Christmas Day.
