Rhubarb Crumble
Ingredients
- Shetland Rhubarb (enough to cover base of your dish)
- 2 tsp Caster Sugar (or more if preferred)
- 2 tsp Cornflour
- 100g Plain Flour
- 50g Oats
- 110g Shetland Butter (softened)
- 50g Soft Brown Sugar
Method
- Preheat oven to 180°C.
- Cover base of your oven proof dish with a decent layer of rhubarb.
- Sprinkle rhubarb with sugar and cornflour and shake/stir to coat. Leave to sit for 10 mins.
- Add flour, oats, sugar and butter to a bowl and rub together to form a crumble mix consistency (like bread crumbs with oats in!)
- Top the rhubarb with the crumble mix and bake for around 45 mins - keep a check on it and when rhubarb is bubbling, it's ready!
