Simple Baked Tusk
Ingredients
- Tusk Fillets
- Whole Mozzerella
- Couple of Good Quality Tomatoes
- Pesto
- Olive Oil
- Salt and Pepper
Method
- Lay tusk fillets on a greaseproof paper on a baking tray.
- Season to taste.
- Slice mozzerella and tomatoes and lay across top of fillets.
- Mix some pesto with olive oil - just enough to make it easy to brush over fish and toppings.
- Bake in oven for about 15-20 mins at 180°C - Check it is opaque throughout.
