Simple Baked Tusk

Method

  1. Lay tusk fillets on a greaseproof paper on a baking tray.
  2. Season to taste.
  3. Slice mozzerella and tomatoes and lay across top of fillets.
  4. Mix some pesto with olive oil - just enough to make it easy to brush over fish and toppings.
  5. Bake in oven for about 15-20 mins at 180°C - Check it is opaque throughout.
