Ana's Segedin Gulaš with Pražen Krompir
Ingredients
Serves 3
- 1 jar of Loving Foods fermented sauerkraut (475 g)
- 3 bay leaves
- 200 g diced beef
- 2 teaspoons Hungarian paprika
- 2 medium-sized onions (one for the goulash, one for the potatoes)
- 750 g potatoes
- 3 tablespoons butter
- Salt
- Pepper
Method
Segedin Gulaš
- Slice one onion and fry it until translucent.
- Add the diced beef, season with salt, and let it brown slightly.
- Stir in the paprika, then add the sauerkraut and bay leaves.
- Pour in just enough water to barely cover the ingredients.
- Cover the pot and simmer gently for 1 to 1½ hours, until the beef is tender and the flavors combine
Pražen Krompir (Pan-Fried Potatoes)
- Cook the potatoes unpeeled in water.
- Once cooked, peel and slice them.
- Fry the second sliced onion in butter until soft.
- Add the potato slices, season with salt and pepper, and fry while mixing gently with a spoon.
- Let the potatoes brown slightly on one side for extra flavor.
- (Optional) Add a bit of stock or some pork cracklings (ocvirki) for a richer taste.
