Bread and Banana Pudding

Ingredients

  • Half a loaf of stale bread (any kind is fine, softies, rolls, anything!)
  • 3 very ripe bananas
  • 3 Shetland Eggs
  • 500ml Shetland Milk
  • 100g Caster Sugar
  • 1 tsp Vanilla Paste
  • 1 tsp Cinnamon

For optional topping:

  • Brown Sugar
  • Cinnamon

Method

  1. Grease a baking tin and pre-heat oven to 170° C.
  2. Break up bread into a large bowl - doesn't need to be too small as it will be broken up more as we go.
  3. Mash bananas and combine with eggs, milk, sugar, vanilla and cinnamon.
  4. Pour over bread and leave to soak for 15 minutes.
  5. Mush up the mixture a bit more.
  6. Bake for 45-50 minutes.

Serve warm with ice cream!
