Buttermilk Waffles

Buttermilk isn't just for bannocks! This is a great recipe which makes a very large batch of waffles.

Buttermilk Waffles

Ingredients

  • 420ml Shetland Buttermilk
  • 110g Melted Shetland Butter (plus more for greasing waffle iron)
  • Half tsp Vanilla Bean Paste
  • 3 large Shetland Eggs
  • 220g Plain Flour
  • 50g Caster Sugar
  • 1.5 tsp Baking Powder
  • 1 tsp Bicarbonate of Soda

Method

  1. Mix all dry ingredients in a bowl.
  2. Add beaten eggs, melted butter and vanilla - give a good stir up to combine and remove any lumps.
  3. Add buttermilk in gradually until all combined into a smooth batter.
  4. Leave batter to rest while waffel iron heats up.
  5. Brush waffle iron with some melted butter - add some batter (getting the exact amount just takes a bit of practice!) and cook for around 5 to 7 minutes. I found 7 made a nice, slightly crispy waffle.
  6. Serve with berries and squirty cream!
