Buttermilk Waffles
Ingredients
- 420ml Shetland Buttermilk
- 110g Melted Shetland Butter (plus more for greasing waffle iron)
- Half tsp Vanilla Bean Paste
- 3 large Shetland Eggs
- 220g Plain Flour
- 50g Caster Sugar
- 1.5 tsp Baking Powder
- 1 tsp Bicarbonate of Soda
Method
- Mix all dry ingredients in a bowl.
- Add beaten eggs, melted butter and vanilla - give a good stir up to combine and remove any lumps.
- Add buttermilk in gradually until all combined into a smooth batter.
- Leave batter to rest while waffel iron heats up.
- Brush waffle iron with some melted butter - add some batter (getting the exact amount just takes a bit of practice!) and cook for around 5 to 7 minutes. I found 7 made a nice, slightly crispy waffle.
- Serve with berries and squirty cream!
