Cucumber Ketchup

Perhaps an acquired taste, but this is really nice with gravalax and an oatcake!

Cucumber Ketchup

Ingredients

  • 2 Whole Cucumber (deseeded & chopped)
  • 100ml Rice Wine Vinegar
  • 1 or 2 tsp Caster Sugar (start with 1 and see what you think!)
  • 2 tsp Xanthan Gum
  • Shetland Salt (to taste)

Method

  1. Add cucumber, vinegar, sugar and salt to blender and blitz up until smooth.
  2. Add 1 tsp of Xanthan Gum and blitz again.
  3. Repeat step 2 - if it is too runny you can repeat again, but adding gradually is definitely best!
  4. Use as a sauce with gravalax or smoked salmon.
