Cucumber Ketchup
Ingredients
- 2 Whole Cucumber (deseeded & chopped)
- 100ml Rice Wine Vinegar
- 1 or 2 tsp Caster Sugar (start with 1 and see what you think!)
- 2 tsp Xanthan Gum
- Shetland Salt (to taste)
Method
- Add cucumber, vinegar, sugar and salt to blender and blitz up until smooth.
- Add 1 tsp of Xanthan Gum and blitz again.
- Repeat step 2 - if it is too runny you can repeat again, but adding gradually is definitely best!
- Use as a sauce with gravalax or smoked salmon.
