Easy Batch Biscuits

This recipe makes an incredible 100 peerie biscuits - you can freeze the dough to cook later, making it perfect for "homebake" requests - or unexpected guests! You can add any kind of additions; chocolate chips, dried fruit, nuts, etc. But the basic mix makes a melting moment/custard cream type biscuit.

Easy Batch Biscuits

Ingredients

Makes enough for 100 peerie biscuits/cookies

  • 500g Shetland Butter
  • Third of a cup of Caster Sugar
  • 4 and a half cups Self Raising Flour
  • 1 cup Custard Powder
  • 1 tin Condensed Milk
  • Optional: Chocolate chips, dried fruit, nuts, etc

Method

  1. Preheat oven to 170°C
  2. Put butter in a bowl - soften slightly in microwave so it can be easily mixed. Add sugar and condensed milk. Beat together.
  3. Add custard powder and flour and mix/knead until combined.
  4. Cut the dough into however many batches you like. (I went for 8 and was able to make each batch stretch to 12 to 14 biscuits.). Roll into a sausage shape and wrap in clingfilm.
  5. If baking now, refridgerate for half an hour, then slice into biscuits. Arrange on a baking tray and back for 12 to 15 mins.
  6. If saving for later, pop in freezer! When ready to use, slice and bake as above.
