Easy Batch Biscuits
Ingredients
Makes enough for 100 peerie biscuits/cookies
- 500g Shetland Butter
- Third of a cup of Caster Sugar
- 4 and a half cups Self Raising Flour
- 1 cup Custard Powder
- 1 tin Condensed Milk
- Optional: Chocolate chips, dried fruit, nuts, etc
Method
- Preheat oven to 170°C
- Put butter in a bowl - soften slightly in microwave so it can be easily mixed. Add sugar and condensed milk. Beat together.
- Add custard powder and flour and mix/knead until combined.
- Cut the dough into however many batches you like. (I went for 8 and was able to make each batch stretch to 12 to 14 biscuits.). Roll into a sausage shape and wrap in clingfilm.
- If baking now, refridgerate for half an hour, then slice into biscuits. Arrange on a baking tray and back for 12 to 15 mins.
- If saving for later, pop in freezer! When ready to use, slice and bake as above.
