Easy Christmas Pudding

Ingredients

  • 1 Cup Raisins
  • 1 Cup Sultanas
  • 1 Cup Self Raising Flour
  • 1 Cup Grated Shetland Butter
  • 1 Cup Brown Bread Crumbs
  • 1 Cup Dark Muscovado Sugar
  • 1 Cup Mixed Nuts
  • 1 tsp Mixed Spice
  • 1 tsp Cinnamon
  • 1 Cup Shetland Milk
  • 1 Shetland Egg (beaten)

Method

  1. Mix all dry ingredients in a large bowl.
  2. Add milk and beated egg.
  3. Steer it up!
  4. Pour into pudding bowl and cover with greased tin foil or greased proof paper with a fold in to allow space to rise if needed. Tie with string.
  5. Bring a large pan of water to the boil and reduce to simmer.
  6. Add pudding to pan, making sure water is halfway up the side.
  7. Simmer with a lid for 2 and a half hours.
  8. Cool and store in an airtight container until Christmas Day.
