International Kitchen 2023 - Anneka's Kniepertjes

In the northern part of the Netherlands they bake kniepertjes (knijpen is to squeeze) and nieuwjaarsrolletjes (New Year coils) at the end of the year.

The kniepertjes signify the end of the year, they are flat. They symbolise the past year, which is completely rolled out.

The nieuwjaarsrolletjes celebrate the beginning of the year, coiled, just like the New Year that will roll out in the future.

International Kitchen - Anneke's Kniepertjes

Ingredients

  • 250g butter (room temperature)
  • 2 packets of vanilla sugar (or ½ tsp vanilla extract)
  • 2 eggs
  • 350g caster sugar
  • 500g plain flour

Method

  1. Mix the butter, sugar and vanilla sugar with your food processor or hand mixer.
  2. Add the eggs, one by one and mix together.
  3. Add the flour and mix it until it is a dough. When it is too dry, add a spoon of water.
  4. Make balls the size of a walnut and let the dough rest for one hour in the fridge..
  5. Heat the kniepertjes iron and put a little butter on it.
  6. Put a ball of dough in the middle and press the iron together. It will take about a minute, then the kniepertje will be brown.
  7. Remove with a spatula and cool on a rack.
  8. When they are cool, enjoy your kniepertjes.
