Rhubarb Crumble

Ingredients

  • Shetland Rhubarb (enough to cover base of your dish)
  • 2 tsp Caster Sugar (or more if preferred)
  • 2 tsp Cornflour
  • 100g Plain Flour
  • 50g Oats
  • 110g Shetland Butter (softened)
  • 50g Soft Brown Sugar

Method

  1. Preheat oven to 180°C.
  2. Cover base of your oven proof dish with a decent layer of rhubarb.
  3. Sprinkle rhubarb with sugar and cornflour and shake/stir to coat. Leave to sit for 10 mins.
  4. Add flour, oats, sugar and butter to a bowl and rub together to form a crumble mix consistency (like bread crumbs with oats in!)
  5. Top the rhubarb with the crumble mix and bake for around 45 mins - keep a check on it and when rhubarb is bubbling, it's ready!
