Smoked Mackerel and Tattie Salad
Ingredients
For Mayonaise
- 1 Shetland Egg
- Pinch Shetland Salt
- 1 tsp Dijon Mustard
- Juice of half a lemon
- 200ml Vegetable Oil
For the Salad
- Cooked New Tatties (as much as you need to fill your belly!)
- 1 or 2 Smoked Mackerel Fillets per person (again, how much do you fancy?!)
- 1 tablespoon Capers
- 1 or 2 Spring Onions
- Half an Apple
- Squeeze of Lemon (to taste)
Method
- To make mayonaise: add all ingredients to a tall jar with wide neck or a jug - something you can fit your stick blender into easily. Blend until thick and creamy. It really is that simple!
- For the salad: chop up all ingredients how you like them - add a dollop of your homemade mayonaise and give it a mix up.
- Enjoy!
