Tom Jamieson’s bannock recipe

Ingredients

  • 2 lbs plain flour
  • 1 oz cream of tartar
  • ½ oz bicarbonate of soda
  • 1 pint milk
  • 3 fluid oz sunflower oil
  • 0.4 oz salt

Method

  1. Sieve the flour, cream of tartar, bicarb of soda and salt
  2. Make a well in the mixture and add oil and milk
  3. Mix (but not too much)
  4. Turn out onto a floured surface and fold a couple of times until smooth
  5. Cut into 8 oz weights
  6. Shape, roll and quarter
  7. Cook on a dry griddle or frying pan on a low to medium heat, turning once
