Turkish Pasta

Ingredients

Yoghurt Sauce:

  • 1 Cup Greek Yoghurt
  • 3 Cloves Garlic (crushed)
  • Half a lemon - zest & juice
  • Salt

Tomato Garnish:

  • Half Punnet Cherry Tomatoes
  • 1.5 Tsp Sumac
  • Handful Fresh Mint (chopped)

Lamb:

  • 500g Lamb Mince
  • 1 Onion (chopped)
  • 1 Tsp Onion Powder
  • 1 Tsp Cumin
  • 2 Tsp Paprika
  • 1 Tbsp Smoked Tomato Paste
  • Salt/Pepper to taste

Pasta:

  • 250g Farfalle Pasta

Paprika Butter Dressing:

  • 2 Tbsp Shetland Butter
  • 2 Tsp Paprika

Method

Yoghurt Sauce:

  1. Mix yoghurt, garlic, lemon juice & zest - salt to taste. Set aside for now.

Tomato Garnish:

  1. Half cherry tomatoes, add sumac & chopped mint.

Lamb:

  1. Start browning lamb mince in pan, brown really well before adding onion.
  2. Cook pasta at the same time.
  3. Add onion powder, paprika, cumin and tomato paste - continue to brown until nearly crispy.

Paprika Butter:

  1. Melt butter with paprika until liquid.

To serve:

  1. Add serving of pasta to a bowl.
  2. Add some yoghurt sauce.
  3. Add some lamb mince.
  4. Add some tomato garnish.
  5. Finish with a drizzle of paprika butter.
